Subsequently food statistics indicated an increased consumption of dairy products, fresh fruit, fresh vegetables, sugar and syrups, coffee, tea, cocoa, and spices. Decreased consumption was shown for meats, potatoes, and grain products. (62) By and large, the American diet continued to reflect a considerable reliance upon animal products, rather than on grains, which meant that a relatively large acreage was required to feed the American public. Whereas a grain and fish diet, such as in Japan, requires only a quarter of an acre high-yield cropland and no pasture per capita, the American diet requires about two and a half acres of cropland and ten acres of pasture per capita. Also it indicated a shift toward the so-called protective foods, toward those high in vitamins and proteins. (63) This change was greatly furthered by governmental food inspection (the Pure Food and Drug Act was passed in 1906), by the increasing use of mechanical refrigerators in the 1920's and 1930's and of freezers for frozen food during recent decades. In the years after World War I, a food revolution took place that was reminscent of the one that occurred after the Civil War. The output of the food-manufacturing industry quadrupled from 1900 to 1940. (64) In that interval, as we have mentioned earlier, home canning gave way to commercial canning, and the labor of housekeeping was lightened. Fortunately most of the major dietary changes that have taken place since the middle of the 19th century have resulted in better nutrition for the population. In part, these shifts have taken place because of a preference for new foods rather than old, but in part, they have been made because the new foods were advocated by nutritionists. Apparently American dietary customs were not so deeply ingrained as to prevent change in the interests of better health. (65) Possibly one factor that has contributed to the readiness of Americans to accept new foods or food preparations is the general familiarity most have with a variety of regional dishes coming from many different lands. Within a small area in New York City or San Francisco, one can find restaruants specializing in French, Italian, German, Turkish, Arabian, or Chinese cuisine. And at a Chinese restaurant in the United States the chef and waiter are as likely as not to be Oriental.

An intelligence test is a rough measure of a child's capacity for learning, particularly for learning the kinds of things required in school. It does not measure character, social adjustment, physical endurance, manual skills, or artistic abilities. It is not supposed to—it was not designed for such purposes. (22) {{U}}To criticize it for such failure is roughly comparable to criticizing a thermometer, for not measuring wind velocity.{{/U}} The other thing we have to notice is that the assessment of the intelligence of any subject is essentially a comparative affair. (23) {{U}}Now since the assessment of intelligence is a comparative matter we must be sure that the scale with which we are comparing our subjects provides an "effective" or "fair" comparison.{{/U}} It is here that some of the difficulties which interest us begin. Any test performed involves at least three actors: the intention to do one's best, the knowledge required for understanding what you have to do, and the intellectual ability to do it. (24) {{U}}The first two must be equal for all who are being compared, if any comparison in terms of intelligence is to be made.{{/U}} In school populations in our culture these assumptions can be made fair and reasonable, and the values of intelligence testing has been proved thoroughly. Its value lies, of course, in its providing a satisfactory basis for prediction. No one is in the least interested in the marks on the test that the child will do better or worse than other children of his age at tasks which we think require "general intelligence". (25) {{U}}On the whole such a conclusion can be drawn with a certain degree of confidence, but only if the child can be assumed to have had the same attitude towards the test as the other with whom he is being compared, and only if he was not punished by lack of relevant information which they possessed.{{/U}}

The cable is expected to be completed in the year 2000. This new fiber optic technology system will transmit voice, data and images at up to a total of 80 gigabits per second. The capacity of 80 gigabits per second is a massive speed advance on previous technology, and allows the transmission of more than one million calls simultaneously. (61) The $1.5 billion China-US Cable Network, as it is called, provides a digital connection between China and the US, and overcomes the small fiber optic capacity which has been available, and which, among other things, affects the ability to expand Internet capacity. (Currently all links are via satellite). China Telecom has been trying for some time to set up a direct link with the US and this cable is a key project for the ninth Five-Year Plan. China Telecom is also keen to own some of the fiber capacity to reduce its costs. The cable will form a self-protecting ring with direct conncetions between Bandon, Oregon and San Luis Obispo, California on the west coast of the United States, and Shanghai and Shantou in China. There will be additional sub-landings in Japan, Korea and Guam. (62) This amazing breakthrough in fiber optic technology for China is a joint investment by many carriers including, but not limited to, China Telecom, AT & T, Sprint, Cable & Wireless, and NTT. (63) The cable will be used for all communications such as telephone line services including Internet connections and e-mail links. Each of the investors will have the right to use capacity on the cable, depending on how much they reserve through the cable consortium. (64) Internet, while no doubt taking a portion of the cable, is not the primary motivation for building the cable. Expansion of all communication services and overall quality is driving all international systems. The Internet, however, is beginning to take a disproportionate amount of capacity, and this will definitely drive some new pricing structures for Internet Service Providers and end-users over the next couple of years. There are already major fiber optic systems connecting China to the rest of the world through Japan (which is then connected to other Pacific cable systems), Korea (not currently available for use by North American carriers) and Guangzhou-Hong Kong. From Hong Kong, cables are also available through Singapore, Thailand, Vietnam and Taiwan. (65) Most of these cables can be patched or linked to other global or Asia-Pacific cable systems, giving China access through fiber optic technology to most of the world from the international gateways. The largest operators of cables in Asia are the cable managers Singapore Telecom, KDD in Japan, and the US companies Cable & Wireless and AT&T. The APCN cable from Singapore to Japan already has a capacity of 65 Gbps but the new China-US Cable Network with its capacity of 80 Gbps will show the world the way of the future.

True, radio-active radon gas—the active ingredient in what the mine's owners advertise as "the unmedical approach to anthritis"—can cause cancer. (21)But while the radiation level in the old uranium mine is 175 times the federal standard for dwellings, patients spend only a couple of hours a day down there—not enough to be dangerous by itself. The average patient's age is 72, according to Adrian Howe, chief of the state Occupational Health Bureay; since "the time it takes for lung cancer to develop in an adult is 15 to 30 years, it's likely that other potential causes of death might occur before lung cancer." Is it odd that people would seek out a known carcinogen in their quest for relief from arthritis? Not really. Arthritis patients are particularly apt to try unproven treatments; one study found that 94 percent of a group of patients had tried at least one unconventional therapy. Conventional therapies often don't work and can have unpleasant side effects. (22)Pain is subjective, notoriously prone to the placebo effect, the temporary improvement that may follow even medically useless treatments. The symptoms of arthritis can become much weaker for a time no apparent reason, and it is easy for patients to be fooled by such a phenomenon. People who take unconventional cures "get" pain relief, "not an actual decrease in swelling of the joints or changes in lab-test results," says Dr. Frederic McDuffie, director of the Arthritis Center at Atlanta's Piedmont Hospital. "Who can tell them they're not feeling better?" (23) Almost every substance that can be packaged has been sold as an arthritis treatment at one time or another. These range from the merely misnamed ("arthritis formula" painkillers, in which the formula is aspirin) to the harmless but useless (copper bracelets) to the repulsive (injections of turtle blood, because turtles live a long time without getting arthritis) and the dangerous (unsupervised doses of steroids). Just last month a supermarket newspaper carried a front-page story on a "wonder salad dressing" for arthritis (garlic oil and cider vinegar). In one experiment, people believed that spraying joints with the household lubricant was beneficial. (24) Radon mines at least boast a distant medical antecedent. At one time, McDuffie says, radiation therapy was used to treat a severe spinal arthritis. Unfortunately, he adds, "the amount of radiation they had to give to produce relief caused leukemia." Daryl Parker, president of the free Enterprise mine, claims that in radon therapy the gas "works as a powerful nerve and cell stimulant that has a profound effect on the central nervous system.., it stimulates the boy's own ability to heal itself." (25) It is a powerful tribute to either nerve stimulation or the power of suggestion that people say they really do feel better after sitting in a damp, 50-degree cavern for two hours a day. As many as 120 people daily spend $3.50 an hour to descend 80 feet into the granite-walled tunnel and breathe the stimulating emanations. "I've been to a number of doctors. I've been to healers in the Philippines, and sitting in the mine gives me more relief than anything," says 69-year-old D.M. Langford, who drives up to the mine twice a year from the San Joaquin Valley. "I get where I can't walk if I don't come up here." As McDuffie says, who can tell him he's not feeling better?
