摘要
我国已有单位开展健康食堂/营养食堂建设,但食堂在营养健康管理工作方面还处于探索阶段。本研究通过文献检索、数据查询、专家咨询、专题讨论以及实地调研的方法,对我国单位食堂营养健康管理工作的现状和需求进行分析。我国已开展的食堂创建以健康食堂为多,且偏重食品安全;在食堂的营养促进方面,做法多停留在环境建设,涉及营养膳食供应等内涵工作较少。建设健康食堂的趋势是要更加突出食堂在营养健康方面的促进作用,有必要制定相应标准或工作规范。
In China, some workplaces already carried out the construction of healthy canteens or nutritional canteens, However, they are still in the exploratory stage in terms of the nutrition and health management. Through literature search, data queries, specialist consultation, panel discussion and field investigation, this study analyzed the current status of the nutrition and health management in staff canteens in China. In China, there are more ‘healthy canteens’ developed than ‘nutritional canteens’, and their work focused on food safety. While for the nutrition promotion aspect of these canteens, the practice still stayed in the environment construction, the connotation work involving nutritious meal supply was relatively lacking. The healthy canteen development should further highlight the role of the canteens in nutrition and health, and it is necessary to formulate corresponding guidelines or work practices.
