潍坊市市售生禽(畜)肉中空肠弯曲菌和沙门菌污染状况调查 被引量:1

Investigation on Campylobacter jejuni and Salmonellacontamination in raw poultry and livestock meat sold in Weifang City

摘要 目的空肠弯曲菌和沙门菌是公共卫生学上重要的人畜共患致病菌,也是重要的食源性致病菌。本研究了解潍坊市生禽(畜)肉中沙门菌和空肠弯曲菌污染状况,为食品风险评估、安全标准修订提供依据。方法2019年第1~4季度从潍坊市各县市区采集生禽肉和生畜肉共110份,其中生畜肉40份,生禽肉40份,调理肉制品10份,血液制品20份。沙门菌检测方法参照GB 4789.4-2016《食品安全国家标准食品微生物学检验沙门氏菌检验》;空肠弯曲菌检测方法参照青岛中创试剂盒说明书。统计分析沙门菌和空肠弯曲菌含量。结果110份生禽(畜)肉样品中共检出沙门菌18株,总检出率为16.4%,空肠弯曲菌9株,总检出率为8.2%。检出的沙门菌共包含9种血清型,其中肠炎沙门菌检出率最高,为4.5%,主要在生禽肉中检出。生禽肉中还检出了利物浦沙门菌、汤普森沙门菌、婴儿沙门菌、肯塔基沙门菌和鼠伤寒沙门菌;生畜肉及畜血中检出了肠炎沙门菌、伦敦沙门菌、基维沙门菌、黄金海岸沙门菌、肯塔基沙门菌和鼠伤寒沙门菌。4种样品生禽肉中沙门菌和空肠弯曲菌检出率最高,分别为22.5%和17.5%;4种样品间沙门菌检出率差异无统计学意义,χ^(2)=2.408,P=0.492;空肠弯曲菌检出率差异有统计学意义,χ^(2)=2.786,P=0.001。季节间沙门菌(χ^(2)=0.374,P=0.541)和空肠弯曲菌(χ^(2)=0.122,P=0.727)检出率差异均无统计学意义。结论潍坊市市售生禽(畜)肉中存在空肠弯曲菌和沙门菌污染,相关部门应加以重视。 Objective Campylobacter jejuni and Salmonella are important zoonotic pathogens in public health,and they are also important foodborne pathogens.This study was to investigate the contamination of Salmonella and Campylobacter jejuni in raw poultry/meat for food risk assessment and safety standard revision.Methods In the first to fourth quarters of 2019,110 raw poultry and livestock meat were collected from all counties and urban areas of Weifang City,including 40 livestock meat,40 raw poultry meat,10 conditioned meat products and 20 blood products.The detection method of Salmonella shall refer to GB 4789.4-2016 national food safety standard microbiological examination of food Salmonella.Campylobacter jejuni was detected according to the instructions of Qingdao Zhongchuang kit.The contents of Salmonella and Campylobacter jejuni were statistically analyzed.Results A total of 18 strains of Salmonella were detected in 110 raw poultry and livestock meat samples,with a total detection rate of 16.4%,and 9 strains of Campylobacter jejuni,with a total detection rate of 8.2%.The detected Salmonella contained 9 serotypes,of which the detection rate of Salmonella enteritidis was the highest,4.5%,it was mainly detected in raw poultry meat.Salmonella liverpool,Salmonella thompson,Salmonella infantis,Salmonella kentucky and Salmonella typhimurium were also detected in raw poultry.Salmonella enteritidis,Salmonella london,Salmonella kiwi,Salmonella gold coast,Salmonella kentucky and Salmonella typhimurium were detected in livestock meat and blood.The detection rates of Salmonella and Campylobacter jejuni in raw poultry meat of the four samples were the highest,22.5%and 17.5%respectively.There was no significant difference in the detection rate of Salmonella among the four samples,χ^(2)=2.408,P=0.492.There was significant difference in the detection rate of Campylobacter jejuni,χ^(2)=2.786,P=0.001.There was no significant difference in the detection rate of Salmonella(χ^(2)=0.374,P=0.541)and Campylobacter jejuni(χ^(2)=0.122,P=0.727)in different seasons.Conclusion There is a potential risk of contamination by Campylobacter jejuni and Salmonellain raw poultry and livestock meat in Weifang,which should be paid more attention.
