摘要
食源性疾病是公共卫生关注的主要问题。根据2015—2019年我国猪肉产品抽查数据(n=22340),开展了一项关于猪肉产品的质量安全影响因素分析,评估我国猪肉产品市场的安全状况。结果显示,猪肉产品不合格率从2015年的10.87%下降到2019年的2.44%,这意味着近年来我国猪肉产品的安全性有了很大提高。通过对影响猪肉产品安全的主要因素进行分析,发现添加剂的检出率为1.62%,是影响猪肉产品安全的主要因素之一。其次,微生物污染和兽药残留也是影响猪肉产品安全的重要因素,与受季节和温度影响的微生物污染不同,兽药残留水平主要与动物疾病有关。此外,重金属污染虽然只占所有抽样产品的0.17%,但与其他因素相比,重金属污染与原料养殖环境污染密切相关,可能会在很长一段时间内对产品安全产生持久的影响。
Foodborne diseases are of major concern for public health.A study on pork products was undertaken to assess the safety status of pork products in China market based on spot check data of pork products in China from 2015 to 2019(n=22340).The results showed that the percentage of unqualified pork products was decreased from 10.87%in 2015 to 2.44%in 2019 which meant the safety of pork products in China was improved greatly in recent years.According to the statistics on the main factors affecting the safety of pork products,it was found that additives were the main factors affecting the safety of pork products since the detection rate of the additive was 1.62%.It was mainly affected by the type of pork products and the production process.The results also showed that microbial contamination and veterinary drug residues were the main factors affecting the safety of pork products.However,different from microbial contamination,which was affected by season and temperature,the level of veterinary drug residues was mainly related to animal diseases.In addition,heavy metal pollution may have a lasting impact on product safety in a long period of time compared with other factors for it was closely related to environmental pollution of raw material cultivation,although it accounted for only 0.17%of all sampling products.
