摘要
随着全球旅游经济蓬勃发展和游客消费从产品、服务向体验转移,人类进入"新旅游"时代。美食旅游作为旅游业的一个利基领域,在刺激地方、区域和国家经济以及增强可持续性和包容性方面具有巨大潜力,全球美食旅游发展趋势明显。欧美国家在发展美食旅游方面起步较早,并积累了丰富的实践经验,亚洲部分国家也相继推出美食旅游项目以复兴地方文化遗产和经济。美食旅游在我国旅游战略中的重要性较为模糊,尽管有着良好的政治经济基础、拥有广泛深厚的地域饮食文化资源,并且手信食品消费、美食节、美食街区等美食旅游形态在旅游业中的作用越来越凸显,但是美食产品同质化、内容和形式单一等问题也同样突出。为了更好地发挥美食旅游的潜力,需要在食物的真实性、美食创意、塑造旅游者的流畅体验等方面进行提升,并突破地域和产业上的限制,开展区域美食合作,延伸美食旅游产业链,推进美食旅游联动发展。
With the booming global tourism economy and the shift of consumer spending from products and services to experience,human tourism has entered the"new tourism"era.As a niche area of tourism,gourmet tourism has great potential in stimulating local,regional and national economies,as well as enhancing sustainability and inclusiveness.The development trend of global food tourism is obvious.European and American countries started earlier in the development of gastronomy tourism and accumulated rich practical experience.Some Asian countries have also launched gastronomic tourism projects to revitalize local cultural heritage and economy.The importance of culinary tourism in China’s tourism strategy is rather vague.Despite having a good political and economic foundation and a deep and profound regional dietetic cultural resources,the food consumption of handicrafts,food festivals,food courts,etc.are in the tourism industry.The role is more and more prominent,but the homogeneity of food products,single content and form and other issues are outstanding.In order to better develop the potential of gastronomy tourism,it is possible to enhance food authenticity,food creativity,and shaping the smooth experience of tourists,and to break through regional and industrial restrictions,carry out regional food cooperation,and extend the food tourism industry chain.Promote the development of food and tourism linkages.
