摘要
以葵花籽粕为原料,进行低温去脂肪和绿原酸后,将所得的葵花籽分离蛋白用木瓜蛋白酶进行水解,研究水解时间、pH值、温度等因素对水解度的影响,结果表明:最佳酶解条件为:底物浓度6%,酶浓度(E/S)1000U/g,时间90min,pH6.5,温度40℃。
Sunflower seed peptide was extracted from sunflower meal, the fat and the chlorogenic acid are separated from the sunflower seed at low temperature and the sunflower proteins have been enzymatic-hydrolyzed with papain. The influence of treatment time, pH value and reaction temperature on the degree of hydrolysis was studied.The results indicated the optimum condition of enzyme hydrolysis: Substrate concentration15%, enzyme concentration (E/S) 10 000 U/g, treatment time 90 min and reaction temperature40 ℃.
