综述谷胱甘肽作为一种重要活性物质的特性、生理功能、制备及在食品中的应用 .
Glutathione is an important biological active substances. It is not only have wide application in medicine, biology, chemistry etc, but also is a perfect additive for making functional food. The glutathione specific property, physiological function, preparation and application were introduced.
