摘要
酸解法提取海带多糖及微量元素碘、钙等营养成分 ,进行海带营养液风味优化和海带软糖试制的研究 .结果表明 ,1%盐酸和 1%柠檬酸 ,10 0℃酸解 4h为酸解较佳条件 ;海带提取液中添加 5 %砂糖、7%葡萄糖和控制pH 5 .0 ,可制得口感良好的海带营养液 ;海带软糖配方为 :淀粉糖浆 10 0g ,海带提取渣 2 0g ,白砂糖 5 0g ,琼脂 5g ,CaCl2 0 .0 1g ,和控制pH 7.2 .
The methods for extracting nutrient components of kelp-including polysaccharides, microelements such as Iodin, Calcium, and so on-by acid hydrolyzation, optimizing the relish of kelp nutrient liquid and producing the kelp jelly were studied. The results show that the better conditions of acid hydrolyzation are as follows: the concentration of muriatic acid (1%), the concentration of citric acid (1%), the temperature (100?℃), the time of extraction(4 hours). Adding granulated sugar (5%) and glucose (7%) to the extracted liquid of kelp and keeping up pH 5.0, the delicious kelp nutrient liquid will be obtained. The formulations of kelp agar jelly are as follows: amylaceous sirup(100?g), kelp dregs(20?g), granulated sugar(50?g), agar (5?g), CaCl 2(0.01?g), and pH(7.2).
