摘要
超氧化物歧化酶(SOD)是一种广泛存在于生物体内的金属酶,通过催化超氧阴离子自由基(O2-)发生歧化反应,将其转变为过氧化氢和氧气,清除机体代谢过程中产生的过多的自由基,减轻或消除超氧阴离子自由基(O2-)对机体的损害。SOD在防辐射、抗衰老、防治肿瘤等方面具有独特的功能,也是一种重要的功能性食品原料。近几年SOD在食品工业生产中起着重要的角色,特别是在功能性食品加工中。本文主要对SOD的基本理化性质、抗氧化作用、在食品工业中各领域的应用现状及存在的问题进行了概述。
Superoxide Dismutase(SOD)is one of metal enzymes widely existed in organisms.SOD catalyzes the dismutation reaction of O2-in order to eliminate the effect of O2-,which is transformed into hydrogen peroxide and oxygen.SOD has a particular effect on resisting to radiation,aging and antitumor.It plays an important role on food industry,especially on functional food.In this paper,the SOD s physicochemical properties,antioxidation and the application in food industry are reviewed.
