摘要
青霉、曲霉是调味料中的主要污染菌 ,作者从思茅的五一、兰花两大农贸市场随机采集了 1 6份干花椒、1 6份干辣椒样品 ,调查其中青霉、曲霉含量 .结果发现所有样品霉菌含量均超标 .粉末干花椒、干辣椒的霉菌污染状况分别比颗粒干花椒、干辣椒严重 .样品的污染状况与农贸市场环境有一定关系 .
The penicillium and the aspergillus are the main fungi in condiment.Thirty-two samples of Chinese prickly ash and hot pepper are collected from Wuyi and Lanhua market of farm produce.The content of the penicillium and the aspergillus were tested.The result is that all samples have been polluted by fungi and the powder samples have more mold than the pearl's.The comdition of sample's pollution is concerned with the circulation of the market.
