牛乳因其来源广泛、营养丰富、且与人乳成分较为接近而被长期用作母乳代用品。然而由于牛乳与人乳在蛋白质成分上具有较大差异,使得牛乳蛋白质不易被婴儿消化吸收,部分婴儿对牛乳会产生过敏反应。这种蛋白质的差异主要表现在:酪蛋白与乳清蛋白含量比例的差异;牛乳中含有大量的αs-酪蛋白,而母乳中几乎没有;牛乳清蛋白中含有β-乳球蛋白,而母乳中不含有。通过对牛乳蛋白的水解,调整酪蛋白与乳清蛋白含量的比例,去除或减少αs-酪蛋白和β-乳球蛋白,从而制备出利于婴儿消化的母乳代用品。
Cow milk has been used as infant formula for its universality of source 、 abundance of nutrition and the comparability between cow milk and human milk. However, there are still some important differences between them, which make the cow milk protein not be easily digested and absorbed, part of infants will be caused allergic phenomenon by cow milk protein. The differences between human milk and cow milk include: the difference of the protein content proportion between the two kind of milk; there are large amount of protein content of α s-casein in cow milk, while almost no α s-ca-sein in human milk; β-lactoglobulin exists in cow milk but not in human milk. Through hydrolyz ing the cow milk protein, the proportion of casein to whey protein was adjusted and, at the same time, α s-casein and β-lactoglobulin were modified. This product can be used as milk raw material for infant formula and be favorable to infant digest.
