摘要
以制糖米渣为原料,针对大米蛋白的制备提出了新的工艺。通过单因素实验确定胰蛋白酶的最佳酶解工艺为:加酶量为0.2%,酶解过程pH值为7.4,酶解时间为12 h,温度为45℃。
Based on sugar rice dregs as raw material,a new process was claimed to prepare rice protein.By single factor experiments,the best enzymatic hydrolysis process for trypsin was determined: added enzyme quantity(E/S) for 0.2%,pH for 7.4,time for 12 h,temperature for 45 ℃ during the enzymolysis process.
