摘要
以香椿(Toona sinensis)芽为原料提取水溶性蛋白质,在单因素提取试验的基础上通过正交试验优化香椿芽中水溶性蛋白质的提取工艺条件。结果表明,优化的香椿芽水溶性蛋白质提取条件为提取温度40℃、pΗ9.0、料水质量比1∶45、提取时间70 min。此条件下香椿芽水溶性蛋白质的提取率为81.000%。
Water-soluble protein was extracted from Chinese toon(Toona sinensis) sprout.The extraction craft was optimized by orthogonal design based on single factor tests.The results showed that the optimized extraction craft for water soluble protein from Chinese toon sprout was extracting at 40 ℃ and pH 9.0 with mass ratio of material to water at 1∶45 for 70 min.Yield of water soluble protein could be 81.000% under these conditions.
