摘要
研究了西兰花单体与筐装的冷却特性与规律,进行了数学建模,数据采集,对比试验,设计了压差预冷库,总结了技术规范,使西兰花的预冷速度大大加快,西兰花的新鲜度指标大大提高,省时、省电、节本增效显著,提高了出口的竞争力,具有广泛的推广价值。
The cooling properties of freshly harvested broccoli in single head and basket package were studied, and simulation model established. An apparatus for the forced-air pre-cooling of broccoli was designed and installed. The technique for pre-cooling of the produce was summarized. Our results indicate that forced-air pre-cooling technique greatly shortened the cooling time for broccoli, and significantly helped in preserving its freshness, thus promoted the competitiveness of the produce in international market. The technique is also proven to be time, energy and cost saving, and worth of wide application.
