摘要
鸡精是目前市场上倍受欢迎的一种复合调味料。文中介绍了鸡精的定义,比较了鸡精与鸡肉粉、味精、营养保健型鸡精概念的区别,论述了我国鸡精行业现状,并对鸡精生产技术的研究发展趋势及应用前景进行了展望。
Chicken bouillon is a popular compound condiment in the present market.The definition of chicken bouillon,the difference between chicken bouillon and chicken powder,monosodium glutamate,chicken essence are introduced in this paper,the present situation of its industry are also discussed.Moreover,the developing trend of chicken bouillon production technology and its application in food industry are prospected.
