摘要
文中对魔芋甘露聚糖的性质和应用进行了较为详细的介绍,对测定魔芋甘露聚糖的两种方法即甘露脎法和分光光度法,从原理、水解、操作要点、计算方法和优缺点等方面进行了系统的对比,阐明了两种方法的主要区别和实际操作中应注意的有关问题。
The nature and application of mannan in konjak were fully introduced.Two methods for quantitative assay of mannan in konjak assay,namely mannose and osazone,were compared systematically. The principles,hydrolysis,operation,calculation of parameters,merits and defects of the methods were respectively explained in this paper.The main differences between the two methods and key points in operation were also clarified.
