摘要
研究了发酵床养殖模式对猪臀肌中MSTN基因表达量影响及其与肉品质间的相关性,旨在描述不同饲养环境对调控肌肉发育相关基因表达量的差异。在常规水泥地面饲养与发酵床饲养模式下,MSTN mRNA基因相对表达量并未出现显著性差异(P>0.05),但与常规饲养相比,发酵床猪臀肌中MSTN mRNA基因相对表达量低8.6%;常规水泥地面饲养模式下臀肌中MSTN mRNA表达量与剪切力显著负相关(P<0.05);发酵床养殖模式下臀肌中MSTN mRNA表达量与水分含量及其肌纤维直径显著负相关(P<0.05)。2种模式下猪臀肌中MSTN mRNA表达量与猪肉其他品质间的相关性无显著差异(P>0.05)。
In order to determine the effect of microorganism fermentation bed on expression of MSTN and its expression correlation with pork quality,and to describe the differences gene expression in the different breeding environment. The results: there were no significant difference on the expression of MSTN between conventional breeding environment and microorganism fermentation bed( P > 0. 05); the expression of MSTN in the microorganism fermentation bed is lower 8. 6% than conventional breeding environment,in the conventional breeding environment, there was significant negative correlation between expression of MSTN and shear force( P < 0. 05); in the microorganism fermentation bed,there was significant negative correlation among the expression of MSTN,water content and fiber diameter; there were no significant difference on the expression of MSTN between conventional breeding environment and microorganism fermentation bed( P > 0. 05) on the other meat quality index.
