摘要
用DPPH法初步研究了恒顺香醋的抗氧化活性。恒顺香醋乙酸乙酯萃取物具有弱自由基清除活性 ,主要清除活性成分为酚性和酸性化合物。与日本黑醋不同 ,恒顺香醋乙酸乙酯萃取物中自由基清除活性物含量相对较低 ,它并不是恒顺香醋主要抗氧化活性部位。恒顺香醋乙醇沉淀上清液DPPH自由基清除活性较强 ,0 .5mg/mL时DPPH自由基清除率为 6 2 .6 7%。
Antioxidative activity of Hengshun aromatic vinegar was evaluated by means of DPPH.An ethyl acetate extract of Hengshun aromatic vinegar(HE)exerted a weak radical scavenging activity,and the main components were phenolic and acidic compounds.Differring from Kurosu,the level of active components in HE was thought to be too low to explain the antioxidative activity of Hengshun aromatic vinegar.The main active fraction of Hengshun aromatic vinegar accumulated in supernatant of ethanol precipitate.DPPH radical scavenging capacity was 62.67% at (0.5mg/mL).
