摘要
为了了解小麦粉贮藏过程中高分子量麦谷蛋白亚基(HMW-GS)变化情况,本文作者利用含优质亚基1,5,7,9,10的小麦品种烟97L181研究其后熟过程中HMW-GS的变化。结果表明,同一时间所提样品中各亚基在灌浆成熟过程中所占比例没有明显变化,贮存前5亚基含量最高,占HMW-GS总含量的35%左右,其次为10亚基,约占24%;贮存后亚基10、亚基7含量较高,分别占到总量的29%、28%。贮存前后亚基比例有明显变化,5亚基在总亚基中比例下降约15个百分点,分子量较高的7亚基占总亚基比例上升了约12个百分点。
With the variety Yan97L181 composed HMW-GS 1、5、7、9、10, the quantitive changes of different subunits were studied. The result shows that the ratio of different subunits in total quantity is almost the same if the samples are extracted at the same time. Before storage subunit 5 is the most, occupying 35 percents, the next is subunit 10, occupying 24percents; after storage subunit 10 and subunit 7 have the most quantity, (occupying) 29 and 28 percents respectively. So there is difference between samples before and after storage. The ratio of subunit 5 decreased 15 percents sharply, and the ratio of subunit 7 increased ten percents roughly.
