摘要
葡萄皮、梗、籽中含有一定的蛋白质、脂肪、碳水化合物、纤维素等成分,其总酚含量(以没食子酸GAE相当物计算)分别为1.82%、1.79%、4,85%,原花青素含量分别为0.85%、0.72%、3.05%(以湿基含水10%计算),具有很大的开发利用价值。研究结果表明:选择130~150目的葡萄籽粉为原料,采用90%甲醇搅拌40min,在温度为20℃时,多酚提取率最高为100.02%;同样条件下,采用70%丙酮提取原花青素效果最佳,提取率可达99.11%;在恒温提取条件下,超声波处理功率越大,多酚和原花青素提取率越高;真空干燥80~150目葡萄籽粉多酚提取率比自然干燥高9.84%,原花青素提取率比自然干燥高12.61%。
Protein, fat, fibre, carbohydrate, total phenol, proanthocyanidin et al, in the skin, stem and seed of vint grape, has been analyzed. The percentage of total phenol in the skin, stem and seed of vint grape is 1.82%, 1.79%, 4.85%(calculate as GAE), the percentage of proanthocyanidin is 0.85%, 0.72%, 3.05% (10% moisture of raw material). It shows that the extract ratio of total phenol is the highest of 100.02% when the grape seed powder of 130~150 mesh is extracted by 90% methanol with stirring 40min at 20℃; The extract ratio of proanthocyanidin is the highest of 99.11% when 70% acetone is introduced. At the thermostatic bath, the more power of ultrasonic wave, the higher extract ratio of total phenol and proanthocyanidin. The extract ratio of total phenol from grape seed with 80~150 mesh drying by vacuum is 9.84% higher than drying by nature; the proanthocyanidin is 12.61% higher.
