摘要
酶法或发酵方法生产的大豆肽分子量在几百到三十几万之间,传统的隆丁分区法测肽含量方法复杂费时,不适于生产中快速检测。用乙醇作为沉淀剂,先将大分子蛋白除去,再用双缩脲法可快速直接地测出产品中肽含量。本文比较了两种方法,结果表明,新方法可以替代传统的隆丁分区法。
The soy peptide that made from soy protein hydrolysis by fermentation and enzyme are compounds which molecular weight are some hundreds to more than three hundreds thousands.The traditional method that detects peptide by Lundins Method is very complicated and isnt fit for detecting peptide quickly in production.First,the big molecule protein is precipitated to clear off by Alcohol,then the soy peptide can be set out rapidly and directly by lowry.Comparing the two methods,the result indicates the nwe one can take place the traditional one-Lundins Method.
