摘要
研究了抗氧化指标在发酵过程中的演变规律以及与啤酒抗老化值之间的相关性.啤酒的乙醛含量与啤酒的TBA值之间有强烈的正相关性.啤酒的初始TBA值和啤酒的RSV之间有强烈的负相关性.成品酒的乙醛与啤酒RSV之间有负相关性,而二氧化硫和多酚与RSV之间有正相关性.
The change laws of the resistant staling indices(acetaldehyde,TBA value,SO_2 and polyphenols)and the relativity between the resistant staling and RSV of beer were studied.The content of acetaldehyde in beer had the plus relativity with the TBA vale.The initial TBA value of beer had the highLy minus relativity with RSV of beer.The content of acetaldehyde in beer had the minus relativity with RSV of beer,and the contents of SO_2 and polyphenols in beer had the plus relativity with RSV of beer.
