栝楼属三种栝楼种子的营养分析 被引量:33

摘要 用仪器分析和化学分析相结合的方法 ,测定分析栝楼 (Trichosanthes kirilowii Maxim )、双边栝楼(T.uniflora Hao)、大子栝楼 (T.truncata C.B.Clarke)种子的营养成分 ,结果表明 :3种栝楼种子的粗蛋白、粗脂肪和粗纤维的平均含量 (g/10 0 g)为 :19.10、 2 9.4 5、 2 0 .71,具有较高的营养价值。 3种栝楼种子都含有大量的不饱和脂肪酸 ,不饱和脂肪酸总量均在 89%以上 ;氨基酸共检出 18种 ,必需氨基酸有 8种 ,占氨基酸总量的 2 9%以上 ;矿质元素种类齐全 ,高 K低 Na的特点明显 ,以 Ca的含量较高 ,人体必需的 Fe、 Mn、 Cu、 Zn等微量元素的含量 (μg/g)分别在 2 0 1、 5 6、 2 3、 6 8以上。 The nutritional components of T.kirilovoii,T.truncata,T.uniflora seeds were determined by chemical and apparatus analytical methods.The result showed that the average content (g/100g) of crude protein.Crude fat and crude fiber were 19.10、29.45、20.71 respectively,which means a high nutritional value.Unsaturated fatty acid in the seeds of those three species were abundant and its total content is over 89%.18 kinds of amino acid were detected,8 of which are essential amino acid.Nearly all kinds of mineral elements were detected,the character of high content of K and low content of Na was obvious,the content of Ca was at a high level.The contents (μg/g) of the essential elements to human body such as Fe,Mn,Cu,Zn were over 201,56,23,68.
