摘要 减压储藏是当今先进的鲜活食品储藏保鲜技术。通过论述减压储藏保鲜果蔬的基本原理及技术特点 ,并在自制的减压冷藏保鲜仓中对油豆角进行了阶段性实验研究 ,描述了实验要领及过程 ,同气调储藏保鲜和普通冷藏保鲜效果进行了外观、质量、重量变化对比 ,对实验结果进行了客观的分析和总结。 Hypobaric Storage is a kind of advanced technology on fresh and live foods at present. The principle and technological characteristic of Hypobaric were stated. Experiments of storage for fruits and vegetables such as snap bean were periodically carried out in hypobaric chamber made by ourselves. Experimental feature and process were described. Variation of appearance, quality, and weight of snap bean in hypobaric storage were compared with those of Controlled-Atmosphere Storage and the traditional storage. Finally, the experimental results were objectively analyzed and summarized.
