摘要
为了进一步开发利用新疆的甜瓜籽资源 ,分析了新疆甜瓜籽的营养成分、氨基酸组成、微量元素的含量以及甜瓜籽油的理化指标和脂肪酸组成。结果表明 ,甜瓜籽含 37.12 %的油 ,2 4 .0 8%的蛋白质 ,2 4 .5 0 %的糖类 ,0 .0 10 %的VE;甜瓜籽蛋白质中氨基酸种类齐全 ;甜瓜籽油富含不饱和脂肪酸 ,含量高达 90 %多 ;甜瓜籽油的理化指标为相对密度d2 04 0 .92 2 8,碘值 174 .5 6gI/10 0g ,折光指数n2 0 1.4 5 89,皂化值 195 .32mgKOH/g ,不皂化物 7.86 %。
In order to promote the development of melon seed source of Xinjiang,the nutritional components,amino acid,and trace elements of melon seeds were analyzed.The results show that the melon seed contains 37.12% oil,24.08% protein,24.50% saccharide and 0.010% V E,and It also contains all kinds of essential amino acid.The physical and chemical index of melon seed oil is as following:d^(20) 4 0.9228,IV 174.56 gI/100 g,refraction index n^(20) 1.4589,SV 195.32 mgKOH/g,unsaponifiable matters 7.86%.
