摘要 目的作为北京市食品污染物监测分站,监测北京市海淀区食品中的5种致病菌。方法按《食品卫生标准检验方法(微生物学部分)》有关章节检验。结果共检测样品309件,检出36株致病菌,检出率为11.65%,其中检出沙门菌1株,金黄色葡萄球菌20株,李斯特菌15株,未检出副溶血弧菌、O157H7;生畜(禽)产品共检测109件,致病菌检出率为2202%;生奶共检测30件,致病菌检出率为1670%,全部为金黄色葡萄球菌;熟肉制品共检测70件,致病菌检出率为1000%。结论生畜(禽)产品及生牛奶仍然是主要被致病菌污染食品,对于由此造成的熟肉制品的二次污染应引起足够的重视。 In order to protect the health of consumers and provide scientific basis for food safety management, five pathogens ( Salmonella, Staphylococcus Aureus, L. Monocytogenes, V. parahaemolyticus, O157∶H7) were monitored in foods from markets and dairies in Haidian district. In the years 2002 and 2003, 309 samples of various foods were tested and 36 strains of pathogens were detected, including 1 strain of Salmonella, 20 strains Staphylococcus Aureus and 15 strains of L. Monocytogenes. No V. parahaemolyticus and O157∶H7 were detected. The overall detecting rate of pathogens was 11 65%. The detecting rate in 109 raw meat samples was 22 02%, in 30 raw milk samples was 16 70% and in 70 cooked meat sample was 10 00%. It was concluded that the raw meat and raw milk were the foods most frequently contaminated by pathogens. Therefrom, secondary contamination of cooked meat should be a matter of serious concern.
