摘要
制曲过程中曲坯中微生物所需要的营养成分主要为碳、氮、磷。不同碳源生成的菌体量和糖化力相差很大,高分子碳源较好。大麦、小麦是制曲的理想原料。制曲中合理利用酒糟既可提高曲子质量,又可降低成本。制曲时必须有足够的氮源。不同氮源对微生物繁殖代谢起到一定的支配作用。制曲原料成分支配着菌的生长与代谢,要掌握好碳、氮比。磷是组成核酸和磷脂的成分,可生成高能磷酸化合物转移能量。(陶然)
The microbe in semi-finished starter during starter-making is in need of nutritional components mainly including carbon, ammonia and phosphor. Starter made by different carbon source varied greatly in saccharifying power and bacteria quantity, among the entire carbon source, macromolecular carbon source is the best. Wheat and barley are the ideal materials for starter-making. Adequate application of distiller′s grains could improve starter quality and reduce production cost. Sufficient ammonia source is required during starter-making and different ammonia source has subdominant effects on microbial metabolism. The proper proportioning of carbon and ammonia playes important role in microbial growth and microbial metabolism. Phosphor, as the composition of nucleic acid and phospholipid, could produce high energy phosphate compound for energy transfer. (Tran. by YUE Yang)
