众所周知,香草风味在全球的冰淇淋市场中,占据着重要的地位。而个别地方的喜好对冰淇淋市场也产生了重要的影响。近年,冰淇淋市场的发展趋向高档化及风味多元化,为了准确地把握各地香草冰淇淋的风味特点,奇华顿的感观科学研究专家们对各地主流的家庭装香草冰淇淋进行了“风味定量分析法”研究。研究数据对香草冰淇淋市场的发展趋势提供合理、可靠的依据,还可以判定出不同区域和不同品牌之间的异同。目前,香草风味的标准化香精语言繁多,在表达香草冰淇淋的复杂风味上,“风味定量分析法”有助于厂商进一步了解市场。
Thirty-four vanilla ice creams from 13 different European countries were evaluated using Principle Component Analysis (PCA). This technique quantifies flavor notes into flavor-standardized language, by displaying sensory data in much smaller numbers of dimensions, which are a linear combination of the initial variables. In this sense, the analysis helps in producing tailor-made ice cream flavors for different markets.
