摘要
通过对全省已编入国家种质资源目录的大麦品种,进行一般品质和啤酒品质的分析鉴定,初步明确了在贵州生态条件下大麦品种资源具有蛋白质、赖氨酸、麦芽浸出物等含量高,糖化力高,而淀粉含量较低,无水敏感性或有轻微水敏感性的特点,为进一步研究、利用打下了基础。
The common quality and the beer-made quality of Guizhou local barley varieties listed in the National Germplasm Catalog were analysed. The results indicated that the quality characters of the local varieties under Guizhou ecological conditions showed high protein,lysine,maltcluns extraction and sacchrification, and low starch,and no water sensitive or light sensitive.It lays the foundation for further research and use.
