摘要
本文提出了水果蔬菜中水溶性总糖测定的新方法,该法基于将样品中水溶性糖经酸水解均转化为还原糖,再与碱性铜盐溶液反应,最后以原子吸收法测定反应后留存在溶液中的铜含量。批量测定时较化学法简便、快速。方法的相对标准差低于3%。经与目前国内通用的常规测定法比较,结果基本一致。
A new method is presented for determination of total dissolvable sugar infruits and vegetables.The dissolvable non-neductive sugar in sample was completely con-verted to reductive sugar by acid hydrolysis beforehand.Then,the redidual amount of Cuafter the reaction of alkaline Cu-salt solution(in excess)and the total sugar was determinedby A A method.Relative standard deviation of this method is below 3 %.The results by thismethod were consistent with those by normal method.
