摘要
对白灵菇鲜品中糖、蛋白质、氨基酸、甘露醇等营养成分的含量 ,及其在贮藏过程中的动态变化进行了系统研究。结果表明 ,白灵菇不仅营养丰富 ,且具有良好的药用价值 ;在白灵菇采后的贮藏过程中旺盛的氮、糖代谢是引起白灵菇失鲜、变质和腐败的原因 ,其中在贮藏前期以氮代谢为主 。
The contents of protein,free amino acids and mannitol of Pleurotus ferulae Lanzi were analysed and their dynamic changes were investigated during storage.The results showed that Pleurotus ferulae had not only high nutritive value but also high medical value.The active nitrogen and sugar metabolism caused the putrefaction of the Pleurotus ferulae during storage.The nitrogen metabolism was main metabolism in prophase of storage,but the sugar metabolism was main metabolicm in anaphase of storage.
