摘要
分别用ZBX66014-87标准、GB/T5009.39-1996标准对同一酱油样品进行分析测定,并用茚三酮比色法进行对照。结果显示:GB/T5009.39-1996标准测定氨基氮含量偏低,ZBX66014-87标准测定氨基氮含量偏高,但ZBX66014-87法扣除半微量凯氏定氮法所测铵盐氮含量后,结果与茚三酮比色法所测值相当。
