摘要
合成了一种具有α,β-不饱和羰基结构的化学抗菌剂--富马酸糠醇甲酯,并对其抗菌活性进行研究,结果表明,其对三种常见细菌具有较强的抑制作用,可以有效延长三种菌的生长适应期,显著降低它们的生长量,而且效果明显优于常用抗菌剂苯甲酸钠,是一种具有广泛开发前景的抗菌剂。
ln this article a new asymmetrical ester, methyl-furfuryl fumarate, containing α,β-unsaturated carbonyl group structure was prepared, and its antibacterial activity was studied. The results showed that it could remarkably inhibit the growth of three bacteria contaminating food commonly. And it could effectively prolong adaptive phase of bacteria,reduce their growth quantity. Furthermore, its antibacterial activity was much better than sodium benzoate. These suggested it a new preservative worth developing and applying largely.
