摘要
对32个马铃薯品种的薯块性状、炸片品质、口味等综合性状,按照炸片的具体要求,与国外引进的炸片品种"大西洋"作对照,进行试炸、观察与比较,从中筛选适于炸片的优良品种,为食品加工提供可靠的理论依据。
32 potato varieties of introuuced and self-culture were compared with introduced variety 'Atlantic' on characters of potato's tuberous,chips quality and its' taste and so on synthetically characters by deep fry test, observe and compare.Good varieties of suitable chips were selected for food processing.
