摘要 〔目的〕研究检测淀粉类食品中丙烯酰胺的高效液相色谱测定方法 ,用于实际样品测定。〔方法〕用水提取食品中丙烯酰胺 ,采用固相萃取小柱对样品液进行纯化 ,以二极管阵列高效液相色谱法测定其含量。〔结果〕方法检出限为 10ng/g,回收率在 80 .0 %~ 115 .0 %之间 ,精密度为 5 .34% (低浓度 )、3.4 0 % (中等浓度 )和 4 .30 % (高浓度 )。〔结论〕该方法测定食品中丙烯酰胺具有操作简单、干扰少、快速、准确可靠等特点 ,可以用于食品中丙烯酰胺测定的推广应用。 睴bjective〕 To study a method of determination for acrylamide in starch food by solid phase extraction-high performance liquid chromatography (SPE-HPLC).〔Method〕The acrylamide in food was extracted by water, and purified by solid phase extraction, then detected by diode array detector of high performance liquid chromatography.〔Results〕 The detection limit of the method was 10ng/g, the recoveries of 80.0%~115.0%, RSD of 5.34% (low concentration), 3.40% (middle concentration) and 4.30%(high concentration) were obtained.〔Conclusions〕 The method of determination of acrylamide in starch food by SPE-HPLC was low disturb, easy to operated and accurate.It can be used in research of the acrylamide in food.
