摘要
采用原子吸收法、比色法、索氏提取法和氨基酸自动分析仪等方法对印尼和海南两种麒麟菜的蛋白质、脂肪、氨基酸、矿物质、维生素等营养成分进行分析及评价。结果表明碳水化合物是麒麟菜的主要成分,印尼和海南麒麟菜碳水化合物含量分别为77.97%和76.99%;蛋白质含量分别为3.17%和2.23%;必需氨基酸含量高,限制性氨基酸为赖氨酸,氨基酸评分分别为91和87;脂肪含量分别为0.32%和0.31%;矿物质含量丰富,维生素含量较低。
The protein, fat, amino acid, minerals and vitamin et al. contents of Eucheuma were analyzed and evaluated by AAS (Atom Absorption Spectrometry), Colorimetric, Soxhlet and Amino Acid Analyzer method et al. The results showed that the carbohydrate was the mass-content of Eucheuma, reaching to 77.97% and 76.99% of the total Eucheuma of Indonesia and Hainan. The protein content of Eucheuma of Indonesia and Hainan was 3.17% and 2.23% respectively, and EAA(Essential amino acid) content was higher than that of other seaweeds with amino acid score 91 and 87 , LAA(Limitary amino acid)were both Lys. Crude fat contents of Eucheuma of Indonesia and china were 0.32% and 0.31% respectively. The minerals were very rich and Vitamin was pool.
