摘要
琼胶酶是一组能降解琼胶多糖的酶,主要有α-琼胶酶、β-琼胶酶两种类型,降解产物在很多方面有独特的活性,除此以外,琼胶酶在分子生物学方面也多有应用,本文从琼胶酶的种类及作用机理、来源、分子生物学研究状况以及应用等方面概述了琼胶酶的研究进展。
Agarase, the name for a set of enzymes which can hydrolyse agar, includes α-agarase and β-agarase. The products of agar enzymatic hydrolysis display many functional activities. Moreover, agarase can be applied in the field of molecular biology. This article summarizes the recent research progress on agarase and its applications in food industry.
