摘要
运用现代分析方法测定了南瓜中的主要营养成分。结果表明,南瓜中含有丰富的南瓜多糖、β-胡萝卜素、抗坏血酸和多种微量元素,并对南瓜的功能特性进行了简要概述,旨在为南瓜产品的评价和南瓜营养保健食品的开发提供新思路。
The important nutritive composition of pumpkin were determined with modern analytical instruments.The results showed that there were comparatively rich polysaccharide,β-carotene,vitamin C and trance elements in pumpkin. The functional properties of pumpkin were introduced.The development prospects of pumpkin products were discussed.
