中国21个省市食品中亚硝酸盐监测状况分析 被引量:12

摘要 目的 研究1990-2003年中国21个省市市售肉制品中亚硝酸盐残留监测状况, 为食品污染评估提供参考依据. 方法 根据国内正式发表的专业文献, 对有关省市肉制品中亚硝酸盐的监测数量、检出比例、区域分布和监测机构等情况进行分类统计与综合分析. 结果 在有监测报道的21个省(自治区、直辖市) 中, 1990-2003年共检测13 013份样品, 其中未检出亚硝酸盐的有5 311份(占40 8% ), 检出7 702份(占59 2% ), 超标3 792份(占29 1% ). 14年来各地平均检出率为61 4%, 平均超标率为27 3%; 未检出率较高的有北京( 73 6%, 176 /239 )、山西( 67 2%, 1 055 /1 569 )、四川( 65 6%,439 /669)、广东(62 4%, 126 /202) 和黑龙江(54 5%, 784 /1 438) 等; 超标构成比前5位依次为辽宁(19 8% )、江苏(15 8% )、山东(13 9% )、山西(10 6% ) 和黑龙江(8 7% ), 按地区排序则前3位分别为西南(35 6% )、华东(33 3% ) 与华北(26 0% ). 定量检测结果表明, 肉制品中的亚硝酸盐含量范围为0 02~4 150mg·kg-1. 发文报告的监测机构主要是各地卫生防疫站. 结论 肉制品中亚硝酸盐残留状况不容乐观, 检出率和超标率仍处于相当高水平. 各地监测无长期规划, 多数以临时抽查为主, 缺乏溯源追踪及持续监控. 建议加强市售食品中亚硝酸? Objective In order to provide reference data for valuation of food pollution level, we study monitoring situation of the remnant nitrite in meat products during 1990-2003 in China. Method According to specialty literature data announced formally about monitoring status of food nitrite in the 21 provinces and cities of China during these 14 years, a classification statistics and comprehensive analysis are conducted in the situation of monitoring quantity, monitoring proportion, district of distribution, organizations of detection and etc. Result The monitoring report distributed in the 21 provinces, autonomous region, and direct jurisdiction city. During 1990-2003 years, (13 013) samples were detected totally, 5 311 samples (40.8%) of which did not contained nitrite, 7 702 samples (59.2%) of them contained nitrite and 3 792 samples (29.1%) of them were higher than the national standard. The average ratio of detected nitrite was 61.4%, and the average ratio of higher than the national standard was 27.3% everywhere in these 14 years. The districts with higher rate of undetected nitrite are Beijing(73.6%,176/239), Shanxi(67.2%,1 055/1 569), Sichuan(65.6%,439/669), Guangdong(62.4%,126/202) and Heilongjiang(54.5%,784/1 438), etc. The districts that had high incidence of nitrite exceeding the national standard are Liaoning (19.8%), Jiangsu (15.8%), Shandong (13.9%), Shanxi (10.6%) and Heilongjiang (8.7%). And By region, southwest (35.6%), east of China (33.3%), and north of China (26.0%) come out top. The result of quantification detection showed that the content range of nitrite in meat products was within 0.02~4 150 mg·kg^(-1). The monitoring organization that delivered report was mainly hygiene epidemic prevention stations in each district. Conclusion The status of remnant nitrite in meat products is of concern, the monitoring rate and the rate of over standard are maintained in a very high level basically. The monitoring organizations in everyplace just make selective temporarily detection, have no long period program, lack to track and trace to origins with keeping on supervising and control. We suggest that normal monitoring and supervision of nitrate in food should be strengthened.
