摘要
利用多孔淀粉的较大比表面积及多孔淀粉颗粒蜂窝状孔洞的性质,在常温下以适当比例与油脂进行混合制成粉末油脂,粉末油脂的含油量可达40%。与常规粉末油脂制备方法相比,生产工艺简单、操作方便、成本低,其产品在烘烤食品中应用与常规法粉末油脂无差异,具有推广应用价值。
Powdered oil with 40% oil content was prepared by using porous starch by absorbing and embedding.Compared with conventional method of preparing powdered oil,the method with porous starch has many advantages such as simple production technology,convenient operation and low cost.And there are no diffrences in the application in bake of the two products prepared by the two method.The preparation of powdered oil with porous starch is worth generalizing.
