摘要
目的:对嗜酸乳杆菌和嗜热链球菌共发酵时两者的互生作用机理进行研究。方法:以质量浓度100gL脱脂乳为培养基,将嗜酸乳杆菌主要代谢产物—氨基酸,如赖氨酸、精氨酸、缬氨酸分别以0.0083mgml、0.0036mgml、0.0053mgml的量加入含嗜热链球菌脱脂乳培养基中,40℃培养,测定凝乳时间;将嗜热链球菌的代谢产物-乳酸、甲酸分别为0.1332mgml和0.075mgml的量加入含嗜酸乳杆菌脱脂乳培养基中,37℃培养,测定其发酵乳的凝乳时间。结果:嗜热链球菌发酵乳凝乳时间由12h缩短到4h,pH为4.52~4.62,吉尔涅尔度为54.23~64.74°T;嗜酸乳杆菌发酵乳的凝乳时间由16h缩短为5h,pH为4.61~4.65;且嗜酸乳杆菌在CO2环境中发酵时,发酵时间明显缩短。结论:嗜酸乳杆菌和嗜热链球菌共发酵时具有互生关系。
Objective:The symbiotic mechanism between Lactobacillus acidophilus and Streptococcus thermphillus fermented together was studied.Methods:Using the 100g/L skim milk as medium,adding the main metabolite-amino acid of Lactobacillus acidophilus ,such as Lysine,Arginine and Valine into skim milk culture medium contained Streptococcus thermophillus by 0.0083mg/ml、0.0036mg/ml、0.0053mg/ml respectively and then cultivating at 40℃,the curd time was determined;adding metabolite of Streptococcus thermphillus into Lactobacillus acidophilus skim milk by 0.1332mg/ml lactic acid,0.075mg/ml formate and then cultivating at 37℃,the curd time was determined.Results:The curd time of Streptococcus thermophillus fermented milk was shortened from 12h to 4h,pH was 4.52~4.62,Thorner was 54.23~64.74°T;the curd time of Lactobacillus acidophilus fermented milk was shortened to 5h from 16h and pH was 4.61~4.65;and fermenting time of Lactobcillus acidophilus was shortened greatly in CO 2 environment.Conclusion: Lactobacillus acidophilus and Streptococcus thermphillus fermented together had the symbiosis relation.
