摘要
介绍了天然色素的提取和精制方法,讨论了溶剂萃取法、超临界CO2萃取法、微波辐射提取法、酶法、吸附解吸法、膜分离法的特点。针对天然色素不稳定的特点,介绍了天然色素的稳定化方法。综述了天然色素的生理功能,对类胡萝卜素、叶黄素类、黄酮类、花色苷类等色素的抗氧化活性、抗菌活性及保健功能进行了介绍。开发功能性的天然色素具有广阔的应用前景。
The extracting and purifying technologies on natural pigments were introduced.The characteristics of every kind of progress such as solvent extraction, supercritical CO_2 extraction,microwave radiation extraction,enzymatic extraction, adsorbent separation technology and membrane separation technology were discussed. The stabilization technologies of natural pigments were introduced based on its characteristics of lability. The physiological functions of some natural pigments were reviewed,some natural pigments such as carotenoid, xanthophylls, flavanones and anthocyanin were introduced on antioxidant activities,antibacterial activities and health protection.It showed wide application prospect to exploit functional natural pigments.
