摘要
我国是世界上大蒜种植的第一大国,资源十分丰富。本文介绍了我国大蒜的品种资源,报道了大蒜的营养成分,其中包括氨基酸、维生素、微量元素的分析结果,论述了大蒜的生理功能和食疗价值,并分析了大蒜杀菌、抗癌功能的主要化学成分,最后简单介绍了大蒜脱臭和系列产品的加工技术,为大蒜资源的开发利用提供了比较全面系统的资料。
hina is rich in garlic resource. Garlic is considered as a kind of nutrientand healthy food. This paper introduces variety resources of garlic at home, reports analytical results of garlic nutrient components, including aminoacids, vitamines and trace elements. It also discusses physiological functions and medicalvalue of garlic and analyses its major chemical compositions that hacve bechnologydal and anticancer functions. In the last part of the paper, processing technologyfor deodorization and a series of garlic products are illustrated- The paper givesdetailed, systematic data for exploitation and utilization of garlic resource.
