摘要
以21世纪桃中的多酚氧化酶为研究对象,以磷酸盐为缓冲液,邻苯二酚为底物,用分光光度法研究了多酚氧化酶作用的最适条件及一些化学试剂对酶活性的影响。结果表明:21世纪桃中多酚氧化酶酶促反应的最适温度为30℃,最适pH值为5 0,维生素C、EDTA、亚硫酸氢钠为较好的抑制剂,Ca制剂也有一定的抑酶效果。
The optimum conditions of the polyphenoloxidase acitivity in 21-century peach was studied using phosphate as buffer,and the activity was affected by some reagent. The results showed that the suitable temperature was 30℃, the optimum pH value was 5.0, vitamin C,EDTA and NaHSO_3 were better inhibitors and calcium had some effect on the activity.
