摘要
系统研究了酸度、温度、酶量、明胶浓度及反应时间等因素,对明胶酶降解反应的影响;确定了最适反应条件。
The effcls for enzyme hydrolysis of gelatin from the various factors including pH.tempcrature,weight percentage of applied enzymc.weight concentration of gelatin and reection, etc. are systematic studied by the viscosity method. The optimum conditions of cnzymolysis of gelatin are given.
