Exploitation and utilization of marine fish oil are very important.Fish oil withhigh content of 5,8,11,14,17 eicosapentaenoic acid(EPA)and 4,7,10,13,16,19 docosa-hexaenoic acid(DHA) can prevent and cure various deseases,and they are very helful to ourhealth. Since both EPA and DHA are highly unsaturated fatty acids,fish oil and its concentrates oxidize faster than common oils and fats. Oxidation of fish oil and its effect on people’shealth are analysed in this paper, and ways of conserving fish oil are described in details.Mechanism and advancement of antioxidation of fish oil are reviewed emphatically.
