摘要
本文分析了梭鱼20尾,半滑舌鳎,乌鳢各5尾,鳜龟、鲶鱼各两尾的脂肪酸含量。从3个方面对这些样品进行了比较。(1)鲶鱼的卵巢含20碳以上的脂肪酸较多,肌肉含20碳以下的脂肪酸较多。(2)海水鱼(梭鱼和半滑舌鳎)的饱和脂肪酸以C16为主,C14次之;淡水鱼(乌鳢、鳜鱼和鲶鱼)亦以C16为主,C18和C14次之;不饱和脂肪酸海水鱼和淡水龟均以C16为主,C18较多。(3)梭鱼的不饱和脂肪酸含量随着体长的增加而升高,而饱和脂肪酸的含量则趋于减少。
We present in this paper an analysis of the composition of fatty acid of nine fish samples. A comparison has been made in the following aspects:(1)From the comparison of fatty acid of muscle and ovary, We can see that the contents of ovary fatty acid are higher when the chain length ranges above 20 carbon atoms; in 0the other hand when the chain length ranges below 20 carbon atoms, the contents of muscle fatty acid are higher.(2)Marine fishes have largest quantity of unsaturated acid C16 in their total unsaturated acid, and have the largest quantity of saturated C16 in their saturated acid too, so the fresh water fishes.(3)With the increase of fish body-length, the content of unsaturated acid increases whereas that of saturated acid decreases.
