摘要
以花生粕为原料,用酶法进行水解,对底物的浓度、酶的用量及作用时间进行了研究,确定了最佳水解条件,制备出花生蛋白饮料。
Peanut dregs were hydrolysed by protease treatment.The concentrations ofsubstrate and enzyme and the reaction time were studied.Peanut protein milk was prepared under the optimum conditions.
