摘要
本研究采用体外模拟体内胃肠道环境某些条件用透析方法研究了魔芋精粉与Pb(2+)、Cd(2+)、Fe(2+)、Zn(2+)、Ca(2+)的结合。并探讨了加热处理、pH改变及环境共存离子的竞争作用对结合的影响。结果表明,魔芋精粉与五种离子的结合具pH依赖性,pH5~5.6时发生不同程度的结合,pH1.5时无结合,pH6.5时随离子浓度增加魔芋精粉与Pb(2+)、Cd(2+)的结合降低,与Ca(2+)的结合增加,与Zn(2+)的结合不变,与Fe(2+)不结合。结合率Zn>Pb、Cd>Ca>Fe,五种离子共存时Fe、Ca与魔芋精粉的结合有竞争性。ca自魔芋精粉中被Fe置换出,Pb、Cd、Ca、Zn的结合明显降低,对Fe的结合明显增加。对实验结果进行Scatchard作图表明魔芋精粉具有与Pb(2+)、Cd(2+)特异结合位点。
The binding of Pb,Fe,Zn,Cd,Ca,to refined konjic powder(RKP)was determined in vitro mesans of dialysis in the simulated gastrointestinal conditions,the results showed metal binding to RKP to be pH dependent and to different extent at ph 5.07 and 6.51 except Fe.The affinity of RKP to metal ion was found to be Ze>Pb and Cd>Ca>Fe.The results also suggested that there might be competitive binding between Fe and Ca under the presences of 5 metal ions.The binding of Pb,Cd,and Zn to PKP was not affected by other coexistent ions,Heat treatment could decrease the banding of Pb,Cd,Ca,and Zn but incresase the binding of Fe to RKP.Scatchard plots indicsated that there were special binding sites for and Ca in RKP.
