摘要
用线性升温法研究半院氨酸对抗坏血酸稳定性的影响,紫外检测波长为243.5 nm。实验结果表明,半胱氨酸能增加抗坏血酸的稳定性。在 20℃,PH 2.0的条件下,含有 2%和 3%的半胱氨酸的抗坏血酸溶液降解反应的活化能分别为 84.814 kJ/mol和 102.834 kj/mol,有效期分别为1. 015 a和 3.154 a。
The linear nonisothermal method was applied to study the effect of cysteine on the stability of ascorbic acid in water (pH2. 0), UV detection at 243. 5 nm. The results showed that the stability of ascorbic acid was increased by cysteine. In the presence of cysteine, the activation energy was 84. 814 kJ/mol (2%Cys)and 102. 834 kJ/mol(3%Cys), the term of validity was 1. 015a and 3. 154a at 20 C.
